Spinach And Chicken Ball soup

Time for prep- 10 minutes

Time for cooking – 1 hour

Ingredients For Making Chicken balls

  • Minced chicken leg – 500 gm
  • Shredded carrots – as required
  • Chopped spring onion – as needed
  • Chicken stock cube – 2
  • Soya sauce – 3 tablespoon
  • White pepper powder – 1 tablespoon
  • Sesame oil – 1 tablespoon
  • Chopped garlic – 2 cloves
  • Salt – to taste
  • Egg -1 for binding
  • Grated ginger – 2 ½ tablespoon
  • Star anise powder – 1 pinch

Ingredients For Soup

  • Chopped mushroom – ½ cup
  • Chicken stock – 5 cups
  • Chopped Spinach leaves – a handful
  • Cleaned sprouts – a handful
  • Beaten eggs – 3
  • Juice of lemons – 3
  • Salt – to taste

Directions

  • First make the chicken ball. For this, mix all the ingredients very well and keep this mixture in the refrigerator.
  • Now, start with the soup. Take a pan and pour the stock in it and put it on the medium-high flame.
  • Once the boiling starts, pour the beaten eggs and stir lightly so that scramble occurs.
  • Now take out the chicken mix from the refrigerator. Wet your hands with little water and start making small balls out of the mixture.
  • Add the balls in the soup.
  • Add the salt and soya sauce.
  • Now add the carrots and mushrooms. Cook for a few minutes. Make sure they do not lose their crunchiness.
  •  Add the lemon juice. Don’t cook too much after adding the juice.
  • Your soup is ready. Now add the sprouts and spinach leaves and serve hot.

Ragi Cookies

Preparation time – 10 minutes

Cooking time – 30 minutes

Ingredients

  • Ragi flour -1 cup
  • Green cardamom powder – ½ cup
  • Baking powder – 2 tablespoon
  • Brown cane sugar – ½ cup
  • Ginger powder – 2 pinches
  • Whisked egg – 1
  • Oil – 1/2 cup
  • Salt- ½ tablespoon

Directions

  • Take a pan and mix the Ragi flour with the cardamom powder. Roast this mixture for 1-2 minutes.
  • In a bowl mix the whisked egg and the roasted mixture. Add the sugar in it and mix very well.
  • Now add the ginger powder and salt and mix again.
  • Next, pour the oil and give it a good mix so that it becomes dark dough.
  • Now make round balls out of it and flatten them using your hands.
  • Pre-heat the oven at 180 degree centigrade.  
  • Take a baking dish and cover it with butter paper. Do not grease it.
  • Now put the flattened cookie on it and bake it for 8 minutes at 180 degree centigrade.
  • Your delicious and healthy Ragi cookies are ready.
