Chicken Parmesan And Veggie Skillet


  • 1 – Egg
  • 2 tbsp. –breadcrumbs
  • 2 tbsp. – flour
  • ½ tsp. – salt
  • ½ tsp. – pepper
  • 1 – Chicken breast
  • 1 tsp. –olive oil
  • One clove of garlic
  • 1 ½ cup – eggplants
  • ¼ tsp. – red pepper
  • One cup – pureed tomato
  • ¼ tsp. – salt
  • ¼ tsp. –pepper
  • One slice mozzarella cheese


Beat the egg in a bowl. Take another bowl to add flour salt and pepper powder and mix well. Heat a pan. Take the chicken breast, dip it in the beaten egg and roll it over in the flour mixture and cook until brown in the pan. Flip it to make sure it gets cooked from both the sides. Now remove the cooked chicken piece from pan and add olive oil and garlic cloves and sate well. To this add chopped eggplants and prepare well. Add red pepper flakes and tomato puree. You can add little salt and pepper as per your taste. Let it cook for 5 mins. After that put the previously cooked chicken breast on the eggplant gravy. Top it up with a slice of fresh mozzarella cheese and bake this in oven 190°c for 12 mins. Your dish is ready.
